Local food is best, says island chef

Local food is the best for your holiday guests. This is the view of Kokomo Private Island Resort executive chef Anthony Healy after his presentation on “Dock to Dish” to students of the Pacific Fusion Restaurant at the University of the South Pacific in Suva on Friday. Chef Healy said he did not understand why guests from overseas would want to eat the food they normally ate back home.

“For me, if you go on holiday you should eat produce from that area, from that island and from that local economy,” he said.

“We just try to concentrate on the produce as much as possible and there are still some things that we can’t get in Fiji and that we still have to bring in relating to meat. “But seafood in Fiji is amazing and every hotel in Fiji should be pushing local seafood.”

Chef Healy said most of the food for their guests was local.

“At least 80 to 90 per cent local food is given to guests and we still have to buy beef and some stuff that we buy out of Australia,” he said.
