Samoa’s Most Stylish Luxury Resort Appoints Two New Chefs to Spice up Menu

Sinalei Reef Resort & Spa – Samoa’s favourite adults-only eco resort – has appointed two new chefs to revolutionise the food offering at its two onsite eateries.

Executive Chef, Misiwata Namal, is a veteran of resort kitchens and brings more than 15 years of culinary experience from around the South Pacific; including most recently, the role of Executive Chef/ F&B Manager at Tokatoka Resort Hotel in Nadi.

He is a results-oriented manager whose priorities are meeting and exceeding budgets; keeping staff morale high; supporting co-workers to achieve their goals; and showcasing fresh, local produce.

Sous Chef, Tokoni Cakautini, joins the Sinalei family from Namale Resort in Fiji where he was Head Chef, and his career spans an impressive list of other top Fijian resorts.

Together, the two experienced chefs are responsible for the resort’s famed, over-the-water restaurant, Ava I Toga and traditional Samoan restaurant, Laumosooi, both of which offer a refined yet relaxed dining experience.

Sinalei Marketing and Business Development Manager, Nelson Annandale, said Misiwata and Tokoni have created a dynamic, innovative vibe, and in the three months they’ve been at the resort, have already made positive changes.

“Our new chefs are proving to be an unstoppable duo and have plans to further elevate the already exceptional food offering at the resort,” he said. “In addition to updating the menu at our restaurants, one of the first things they did was introduce a brand-new snack menu for our younger guests and for those who feel like something lighter, and it has been a huge hit.”

“Guest reviews and feedback since the chefs commenced have been overwhelmingly favourable,” he added.
Sinalei’s culinary philosophy is “fresh, local and honest food” and each menu is developed according to the resort’s farm-and-ocean-to-plate concept.
