Chef Dora Rossi’s Mango Salsa
1 mango –peeled-seeded and diced
¼ cup thinly dice red capsicum
2 tbsp. chopped spring onion
2 tbsp. chopped fresh coriander
1 chilli thinly chopped seeds removed
1 tbsp. lime juice
Mix all ingredients in a bowl, cover and allow to rest ½ hour before serving.
